Munagaku Podi Pesarattu

Pesarattu is already green and wholesome — but stir Zesty Munagaku Podi into the batter before it hits the tawa and something clicks into place. The dried munagaku deepens the earthy quality of the whole green moong, while the podi's cumin, dal, and tamarind edge give each crisp bite a layered, almost nutty sharpness that plain pesarattu simply does not have. This is the moringa-on-moringa pairing that makes you wonder why you ever made it any other way.

Ingredients
- 2 tsp Zesty Munagaku Podi
- 1 cup whole green moong (soaked 6-8 hours)
- 1-2 green chillies, roughly chopped (adjust to taste)
- 1 small piece ginger, roughly chopped
- salt to taste salt
- as needed oil or ghee (neyyi), for the tawa
- to serve ginger chutney or allam pachadi
Method
- Drain the soaked moong and grind it with the green chillies, ginger, and a splash of water to a thick, coarse batter — it should not be too smooth. A little texture is what gives pesarattu its characteristic bite.
- Transfer the batter to a bowl, add the Zesty Munagaku Podi and salt, and mix well. The batter will take on a deeper, speckled green colour from the dried moringa and dal. Rest for 5 minutes.
- Heat a tawa on medium-high until a drop of water skips across the surface. Drizzle a few drops of oil or ghee and wipe lightly with a cloth.
- Pour a ladle of batter onto the centre of the tawa and spread in quick outward circles to a thin, even round. You should see the edges begin to turn golden within a minute.
- Drizzle a little ghee around the edges and along the top. Cook until the underside is a deep golden-brown and lifts cleanly from the tawa — about 2-3 minutes. No need to flip if you spread it thin enough; for a thicker pesarattu, flip once and press lightly.
- Serve immediately with allam pachadi (ginger chutney) or coconut chutney on the side. Pesarattu waits for no one — eat it hot off the tawa.
