A crisp, nutty salad topping that needs no cooking and no fuss — just a generous spoonful of Toasty Flaxseed Podi scattered over whatever greens and vegetables you have ready. The roasted avise ginjalu (flax seeds) and nuvvulu (sesame seeds) bring a satisfying crunch and a warm, toasty depth that makes even a simple kachumber feel like a proper meal. No garlic, no heavy dressing — just honest flavour from the podi doing its job.

Ingredients
- 2 tsp Toasty Flaxseed Podi
- 1 cup cucumber, diced small
- 1 cup tomato, deseeded and diced
- 1 small carrot, grated
- 1 green chilli, finely chopped (optional, adjust to taste)
- 2 tbsp coriander leaves, roughly torn
- 1 tsp lemon juice
- 1 tsp cold-pressed groundnut or sesame oil
- to taste salt
Method
- Dice the cucumber and tomato into small, even pieces and place them in a wide mixing bowl. Grate the carrot directly into the bowl.
- Add the green chilli (if using), torn coriander leaves, lemon juice, and oil. Toss everything together gently so the vegetables are lightly coated.
- Taste for salt and adjust — keep in mind the Toasty Flaxseed Podi already carries salt, so go easy at this stage.
- Just before serving, scatter the Toasty Flaxseed Podi generously over the top. Do not mix it in yet — you want it to sit on the surface so it stays crunchy.
- Serve immediately. As you eat, toss the podi through each portion so the nutty, toasted sesame and flaxseed crunch through every bite.
