Flaxseed Podi Annam is the kind of rice dish that asks nothing of you and gives everything back. Hot annam, a spoon of neyyi, and a generous heap of Toasty Flaxseed Podi — the roasted avise ginjalu and nuvvulu bring a deep, nutty warmth, and the dried red chilli keeps things just lively enough. Ingredients
- 2 tsp Toasty Flaxseed Podi
- 1 cup annam (cooked rice), hot
- 1 tsp neyyi (ghee)
- to taste salt
- 1 small papad or pickle (achaar), to serve (optional)
Method
- Scoop freshly cooked, steaming hot annam into a plate or wide bowl — the rice must be hot so the podi and neyyi coat every grain properly.
- Add the neyyi directly onto the hot rice and mix through gently until the ghee melts and the rice glistens.
- Sprinkle the Toasty Flaxseed Podi over the top — start with 1 heaped teaspoon, then add more to taste. You will smell the roasted sesame and flaxseed lift as soon as it hits the warm rice.
- Mix from the bottom up with a light hand, folding the rice rather than mashing it, until the podi is evenly distributed and every spoonful has that nutty, lightly spiced coating.
- Taste for salt, adjust if needed, and serve immediately — with a papad or a small spoon of achaar alongside if you like.
