Ingredients
- 2 tsp Earthy Beetroot Podi
- 1 cup cooked rice (annam), hot
- 1 tsp ghee (neyyi)
- to taste salt
- 1 small bowl perugu (curd), on the side (optional)
Method
- Scoop freshly cooked, steaming hot annam into a plate or wide bowl — the rice must be hot so the podi and ghee absorb evenly.
- Add the ghee and mix it through the rice first, so every grain gets a light, glossy coat.
- Sprinkle the Earthy Beetroot Podi over the rice. Watch the warm, rosy colour bloom across the white grains as you stir.
- Mix gently from the bottom up until the podi is evenly distributed — no dry pockets, no clumps.
- Taste for salt and adjust. Serve immediately, with a small bowl of cold perugu on the side if the kids like it a little cooler.
