Ingredients

  • 2 tsp  Earthy Beetroot Podi
  • 1 cup  cooked rice (annam), hot
  • 1 tsp  ghee (neyyi)
  • to taste  salt
  • 1 small bowl  perugu (curd), on the side (optional)

Method

  1. Scoop freshly cooked, steaming hot annam into a plate or wide bowl — the rice must be hot so the podi and ghee absorb evenly.
  2. Add the ghee and mix it through the rice first, so every grain gets a light, glossy coat.
  3. Sprinkle the Earthy Beetroot Podi over the rice. Watch the warm, rosy colour bloom across the white grains as you stir.
  4. Mix gently from the bottom up until the podi is evenly distributed — no dry pockets, no clumps.
  5. Taste for salt and adjust. Serve immediately, with a small bowl of cold perugu on the side if the kids like it a little cooler.
