Pizza Seasoning Crispy Mozzarella Sandwich

A crispy mozzarella sandwich pressed with Herby Spice Blend before it hits the tawa — this is a pizza margherita in sandwich form, no oven needed. The dried basil, oregano, and miriyalu sink into the buttered crust as it toasts, releasing that familiar herby warmth the moment the tawa gets hot. Weekday breakfast has no right to smell this good.

Ingredients
- 1.5 tsp Herby Spice Blend
- 4 slices bread (white or brown)
- 4-5 slices mozzarella or processed cheese
- 1 medium tomato, thinly sliced
- 1 tsp butter, softened

Method
- Lay out four bread slices on a flat surface and spread a thin, even layer of butter on one side of each slice — this is the side that will face the tawa.
- On the unbuttered side of two slices, arrange the mozzarella slices first, then the tomato slices on top. Season with a small pinch of salt.
- Sprinkle the Herby Spice Blend generously over the tomato — about 1.5 tsp split evenly between both sandwiches — pressing it lightly into the filling so it does not fall off when you close the sandwich.
- Close the sandwiches with the remaining bread slices, buttered side facing out. Press gently but firmly so everything holds together.
- Heat a tawa on medium flame until warm. Place the sandwiches on the tawa and press down with a flat spatula. Toast for 2-3 minutes until the underside is golden and the kitchen smells of basil and warm bread.
- Flip carefully and toast the other side for another 2 minutes until the cheese has melted and the crust is evenly crisp. Cut diagonally and serve immediately.
