Avocado or hung curd on toast is one thing — but without seasoning, it sits flat. Ingredients

  • 1.5 tsp  Herby Spice Blend
  • 1 ripe  avocado — or 4 tbsp hung curd
  • 2 slices  bread, toasted (multigrain or sourdough)
  • 1 tsp  lemon juice
  • a pinch  salt, to taste
  • a few  cherry tomatoes or cucumber slices, for topping (optional)
  • a drizzle  olive oil or ghee, to finish (optional)

Method

  1. If using avocado, scoop the flesh into a small bowl and mash it with a fork until mostly smooth but still a little textured — not a paste. If using hung curd, spoon it straight into the bowl.
  2. Add the lemon juice and a pinch of salt, then mix through. The base should smell fresh and slightly tangy at this point.
  3. Add the Herby Spice Blend and fold it in evenly. Taste — the spread should smell immediately more herby and rounded, with a gentle warmth from the miriyalu. Add a little more blend if you want it more pronounced.
  4. Toast your bread until golden and crisp. The crunch is important — a soft slice will turn soggy under the spread.
  5. Spoon the seasoned spread generously onto each slice and smooth it to the edges. Top with sliced cherry tomatoes or thin cucumber rounds if using, and finish with a light drizzle of olive oil or ghee.
  6. Eat immediately while the toast is still hot and the spread is cool — that contrast is the whole point.
